Im Fr\u00fchherbst flei\u00dfig Brennesselsamen gesammelt, fein eingelagert und mal wieder zu viel. So viel Porridge und Kekse k\u00f6nnte ich gar nicht essen, dass ich bis zum Jahr darauf alles aufgebraucht h\u00e4tte. Also muss noch eine Idee her. Naja, vielleicht Nudeln. Oder Kekse. Du siehst schon, ich stehe einfach auf Kohlehydrate.<\/p>\n\n\n\n<p>Jetzt hab ich leider nur ein Problem, denn ich bin eine schlechte B\u00e4ckerin, wenn es um Sauerteigbrot geht. Gl\u00fccklicherweise lebe ich mit dem besten Hobbybrotb\u00e4cker der Welt zusammen und muss daher auf nichts verzichten.<br>Wenn ich dann aber doch mal alleine bin, dann kann ich h\u00f6chstens Hefebrot machen. Hefe kann ich. Schmeckt aber nicht so gut und am n\u00e4chsten Tag schon alt.<\/p>\n\n\n\n<p>Dann bin ich letztes Jahr auf &#8222;Wunderbrod&#8220; gesto\u00dfen. Ein dichtes Haferbrot, das \u00fcberhaupt ohne Backtriebmittel auskommt und tagelang frisch schmeckt. Von der Konsistenz erinnert es ein bisschen an Pumpernickel, der Geschmack zum Gl\u00fcck nicht.<\/p>\n\n\n\n<p>Die Legende will es, dass das Wunderbrot von einem norwegischen Pastor als Sportlernahrung entwickelt wurde. Ob das so wirklich stimmt, kann ich nicht sagen, da diese Info nur auf den Websites der Hersteller solcher Brotbackmischungen zu finden ist.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large\"><img loading=\"lazy\" width=\"448\" height=\"252\" src=\"https:\/\/wienerwaldfee.at\/wp-content\/uploads\/2021\/04\/01_Brot_3_web-1.jpg\" alt=\"\" class=\"wp-image-240\" srcset=\"https:\/\/wienerwaldfee.at\/wp-content\/uploads\/2021\/04\/01_Brot_3_web-1.jpg 448w, https:\/\/wienerwaldfee.at\/wp-content\/uploads\/2021\/04\/01_Brot_3_web-1-300x169.jpg 300w\" sizes=\"(max-width: 448px) 100vw, 448px\" \/><figcaption>.<\/figcaption><\/figure><\/div>\n\n\n\n<p>Die im Bioladen erh\u00e4ltliche Backmischung hat mich gleich begeistert. Einziges Manko: sie ist relativ teuer. Also dachte ich mir, das muss auch zum Selbermachen gehen.<\/p>\n\n\n\n<p>Die Zusammensetzung der Zutaten ist schlicht. Hauptbestandteil sind Haferflocken und Leinsamen oder andere quellende Saaten. Zur Auflockerung dienen Sonnenblumenkerne oder andere N\u00fcsse. Diese machen das Wunderbrot zwar recht fett, aber ehrlicherweise isst man davon nicht so viel auf einmal, wie von normalem Brot.<\/p>\n\n\n\n<p>Das Brot enth\u00e4lt relativ viel Protein, vor allem durch den Hafer, aber auch die N\u00fcsse und Saaten. Letzter liefern auch viele unges\u00e4ttigte Fetts\u00e4uren, die nachweislich der Herzgesundheit dienen. Ballaststoffe regen die Verdauung an und machen satt.<br>Hafer hat zudem auch noch anerkannte Cholesterin-senkende Eigenschaften (<a href=\"https:\/\/www.efsa.europa.eu\/de\/efsajournal\/pub\/1885\" target=\"_blank\" rel=\"noreferrer noopener\">Quelle<\/a>) und enth\u00e4lt Antioxidantien, sogenannte Avenanthramide (<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC4325078\/\" target=\"_blank\" rel=\"noreferrer noopener\">Quelle<\/a>), die blutdruckausgleichend wirken.<\/p>\n\n\n\n<p>Alles in allem, k\u00f6nnte man es auch Superfood-Brot nennen. Oh, und wenn du zertifiziert glutenfreien Hafer verwendest, ist das ganze auch noch glutenfrei und eine schmackhafte Alternative zu gekauften, glutenfreien Broten!<\/p>\n\n\n\n<p>Ich habe versucht, mein Brot auf m\u00f6glichst wenige Zutaten zu beschr\u00e4nken, weil ich nicht gerne komplizierte Rezepte mag.<\/p>\n\n\n<div id=\"recipe\"><\/div><div id=\"wprm-recipe-container-224\"
